Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Butter
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Sharp cheddar cheese, grated
  • 3 large Egg yolks
  • 1 teaspoon Salt
  • 0.25 teaspoon Ground white pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Chives, finely chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and roughly chop the russet potatoes. Place them in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat.

Step 3

Reduce the heat to medium and simmer the potatoes until fork-tender, about 15 minutes. Drain the potatoes well and return them to the pot.

Step 4

Mash the potatoes until smooth using a potato masher or ricer. Avoid overworking to prevent a gummy texture.

Step 5

Stir in the butter, heavy cream, Parmesan cheese, sharp cheddar cheese, salt, white pepper, and nutmeg until combined and smooth.

Step 6

Allow the mixture to cool slightly, then mix in the egg yolks one at a time until fully incorporated.

Step 7

Transfer the mashed potato mixture to a piping bag fitted with a large star tip.

Step 8

Pipe small, spiral-shaped mounds of the potato mixture onto the prepared baking sheet, spacing them evenly.

Step 9

Optional: Sprinkle the tops with finely chopped chives for added flavor and presentation.

Step 10

Bake in the preheated oven for 20-25 minutes or until the potato puffs are golden brown on top.

Step 11

Remove from the oven and let them cool slightly before serving. Serve warm and enjoy!
