Ingredients

  • 3 pieces boneless, skinless chicken breasts
  • 12 ounces egg noodles
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 cup sour cream
  • 2 cups cheddar cheese, shredded
  • 1 cup frozen peas
  • 1 cup carrots, peeled and diced
  • 1 onion, finely chopped
  • 4 tablespoons butter, melted
  • 1 cup Ritz crackers, crushed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with non-stick spray or a little olive oil.

Step 2

In a large pot, bring water to a boil. Add the egg noodles and cook according to the package instructions until al dente, then drain and set aside.

Step 3

Meanwhile, season the chicken breasts with garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken breasts for 4-5 minutes per side until golden brown and fully cooked. Remove the chicken, let it rest for a few minutes, then dice into bite-sized pieces.

Step 4

In a large mixing bowl, combine the cream of chicken soup, sour cream, shredded cheddar cheese, frozen peas, carrots, and chopped onion. Mix until well incorporated.

Step 5

Add the cooked noodles and diced chicken to the mixing bowl and gently stir to coat everything evenly with the creamy mixture.

Step 6

Spread the chicken and noodle mixture evenly into the prepared baking dish.

Step 7

In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle this mixture evenly over the casserole as a topping.

Step 8

Place the casserole in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Step 9

Remove from the oven and let cool for a few minutes before serving.
