Ingredients

  • 1 cup Sweetened shredded coconut
  • 1 cup Pecan halves
  • 1 Unbaked 9-inch pie crust
  • 3 Large eggs
  • 1 cup Light corn syrup
  • 0.5 cup Granulated sugar
  • 0.5 cup Packed light brown sugar
  • 0.25 cup Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spread the shredded coconut on a baking sheet and toast it in the oven for 5-7 minutes until golden brown, stirring occasionally. Set aside to cool.

Step 3

In a medium mixing bowl, whisk together the eggs, light corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt until smooth.

Step 4

Stir in the toasted coconut and pecan halves until evenly combined.

Step 5

Place the unbaked pie crust on a baking tray and pour the filling mixture into the crust, spreading it out evenly.

Step 6

Carefully transfer the baking tray with the pie into the oven and bake for 50-55 minutes, or until the filling is set and slightly puffed. A knife inserted into the center should come out clean.

Step 7

Remove the pie from the oven and allow it to cool completely on a wire rack before slicing and serving. This allows the filling to set fully.

Step 8

Serve as is or with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
