Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Salt
  • 1 cup Vegetable oil
  • 4 Large eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Grated carrots
  • 0.75 cup Crushed pineapple, drained
  • 1 cup Chopped pecans or walnuts (optional)
  • 8 ounces Cream cheese
  • 0.5 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9x13-inch pan.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.

Step 3

In another bowl, combine the vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.

Step 4

Gradually mix the wet ingredients into the dry ingredients using a spatula or mixer at low speed. Stir just until combined.

Step 5

Fold in the grated carrots, crushed pineapple, and chopped nuts (if using). Be careful not to overmix.

Step 6

Pour the batter evenly into the prepared cake pans and smooth the surface with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 9

While the cake cools, prepare the cream cheese frosting. In a large bowl, beat the cream cheese and softened butter together until smooth and creamy.

Step 10

Gradually add the powdered sugar, beating on low speed until fully incorporated. Add the vanilla extract and beat until the frosting is fluffy.

Step 11

Once the cake layers are completely cool, spread a generous layer of frosting over the top of one layer. Place the second layer on top and spread more frosting over the top and sides.

Step 12

Decorate with additional chopped nuts or grated carrot if desired. Serve and enjoy!
