Ingredients

  • 4 cups canned navy beans
  • 6 slices bacon
  • 1 medium (diced) yellow onion
  • 0.75 cups ketchup
  • 0.5 cups brown sugar
  • 0.25 cups molasses
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and let it drain on paper towels. Once cooled, crumble the bacon into small pieces and set aside.

Step 3

In the same skillet, leaving about 1 tablespoon of bacon grease, sauté the diced onion until it becomes soft and translucent, about 5 minutes.

Step 4

In a large mixing bowl, combine the ketchup, brown sugar, molasses, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper. Mix until well incorporated.

Step 5

Add the sautéed onions, crumbled bacon, navy beans, and water to the bowl. Stir everything together to ensure the beans are evenly coated with the sauce.

Step 6

Transfer the mixture to a 9x13-inch baking dish and spread it out evenly.

Step 7

Cover the baking dish with foil and bake in the preheated oven for 60 minutes.

Step 8

After 60 minutes, remove the foil, stir the beans, and continue baking uncovered for an additional 30 minutes or until the sauce is thickened to your preference.

Step 9

Remove from the oven and let cool for 5-10 minutes before serving. Enjoy your delicious Kathy's Baked Beans!
