Ingredients

  • 2 cups (shredded) Cabbage
  • 1 cup (shredded) Carrots
  • 4 stalks (finely chopped) Green onions
  • 1 teaspoon (minced) Ginger
  • 2 cloves (minced) Garlic
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 12 pieces Spring roll wrappers
  • 2 cups (for frying) Vegetable oil

Directions

Step 1

1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, green onions, minced ginger, and minced garlic.

Step 2

2. Add soy sauce, sesame oil, salt, and black pepper. Mix well until the vegetables are evenly coated with the seasoning.

Step 3

3. Take one spring roll wrapper and lay it on a clean, flat surface in a diamond orientation.

Step 4

4. Place about 2 tablespoons of the vegetable filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form a cylindrical shape. Seal the edge with a little water to keep it closed. Repeat with remaining wrappers and filling.

Step 5

5. Heat vegetable oil in a deep frying pan or pot over medium heat until it reaches 350°F (175°C).

Step 6

6. Gently slide 3-4 spring rolls at a time into the hot oil and fry for 2-3 minutes per side or until golden brown and crispy. Do not overcrowd the pan.

Step 7

7. Remove the fried spring rolls and place them on a plate lined with paper towels to drain excess oil.

Step 8

8. Serve hot with chili sauce or a tangy dipping sauce of your choice. Enjoy the authentic taste of Kathmandu!
