Ingredients

  • 4 large Sweet potatoes
  • 0.5 cup Orange juice
  • 4 tablespoons Butter
  • 2 tablespoons Brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground nutmeg

Directions

Step 1

Peel the sweet potatoes and cut them into large, even chunks.

Step 2

Place the potato chunks in a large pot and cover them with water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer the sweet potatoes for 20-25 minutes, or until a fork or knife easily slides into the potatoes.

Step 4

Drain the sweet potatoes and return them to the pot or a mixing bowl.

Step 5

Add the orange juice, butter, brown sugar, ground cinnamon, salt, and ground nutmeg to the sweet potatoes.

Step 6

Using a potato masher or electric hand mixer, mash the sweet potatoes until smooth and creamy. Adjust the consistency with additional orange juice, if desired.

Step 7

Taste the mashed sweet potatoes and adjust seasoning if needed by adding more salt, cinnamon, or nutmeg to taste.

Step 8

Serve warm and garnish with an optional sprinkle of cinnamon or a pat of butter on top.
