Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 cup diced tomatoes, canned with juices
  • 2 cups chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup frozen peas
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 4 pieces lime wedges for serving (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 3

Add the diced onions, minced garlic, and diced green bell pepper to the pan. Sauté for 4-5 minutes, until the vegetables begin to soften.

Step 4

Stir in the rinsed rice and toast it in the pan for 2-3 minutes, stirring frequently, until the rice becomes lightly golden.

Step 5

Add the canned diced tomatoes (with their juices), chicken or vegetable broth, tomato paste, ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir everything together until well combined.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pan with a tight-fitting lid.

Step 7

Let the rice simmer for 20 minutes without lifting the lid, allowing it to absorb the liquid.

Step 8

After 20 minutes, remove the lid and gently fluff the rice with a fork. Add the frozen peas and stir them into the rice. Cover again and let cook for an additional 5 minutes, or until the peas are heated through.

Step 9

Taste and adjust seasoning if needed. Optionally, garnish the rice with fresh chopped cilantro.

Step 10

Serve warm with lime wedges on the side for an extra burst of flavor.
