Ingredients

  • 2 pounds Yukon gold potatoes
  • 8 slices Bacon
  • 1 medium Yellow onion
  • 0.333 cup Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 0.25 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the Yukon gold potatoes and dice them into bite-sized pieces. Place them in a large pot, cover with cold water, and bring to a boil. Cook for 10-15 minutes, or until fork-tender, then drain and set aside.

Step 2

While the potatoes are cooking, place the bacon slices in a large skillet over medium heat. Cook until crispy, about 5-7 minutes, turning occasionally. Remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain. Reserve 2 tablespoons of the bacon grease in the skillet and discard the rest.

Step 3

Finely dice the yellow onion and add it to the skillet with the reserved bacon grease. Sauté over medium heat for 3-4 minutes, or until the onions are softened and translucent.

Step 4

In a small bowl, whisk together the apple cider vinegar, granulated sugar, Dijon mustard, water, salt, and black pepper. Pour this mixture into the skillet with the onions and stir well. Cook for 2-3 minutes, allowing the dressing to warm and slightly thicken.

Step 5

Crumble the cooked bacon into small pieces and add it to the skillet along with the cooked potatoes. Gently toss everything together until the potatoes are well-coated in the dressing and warmed through. Remove from heat.

Step 6

Transfer the hot German potato salad to a serving dish and sprinkle with freshly chopped parsley. Serve immediately while warm.
