Ingredients

  • 6 large ripe tomatoes
  • 3 tablespoons olive oil
  • 3 large garlic cloves
  • 12 leaves fresh basil leaves
  • 2 teaspoons fresh oregano leaves
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Wash the tomatoes thoroughly. Core and dice them into medium-sized pieces, setting aside any excess juice.

Step 2

Peel and mince the garlic cloves finely.

Step 3

Heat the olive oil in a large skillet over medium heat. Once heated, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 4

Add the diced tomatoes (and their juices) to the skillet. Stir well to combine with the garlic and oil.

Step 5

Sprinkle in the sugar, salt, and black pepper. Add the red pepper flakes if you prefer a slight kick.

Step 6

Increase the heat slightly and cook the tomatoes for about 15-20 minutes, stirring occasionally, until they break down and the mixture thickens slightly.

Step 7

Stack the fresh basil leaves and roll them into a tight bundle. Slice them into thin ribbons. Add the basil and fresh oregano to the skillet during the last 5 minutes of cooking.

Step 8

Remove the skillet from heat and stir in the balsamic vinegar. Taste the mixture and adjust the seasoning if needed.

Step 9

Serve immediately as a side dish, or spoon over toasted bread for a classic bruschetta topping. Garnish with additional basil leaves if desired.
