Ingredients

  • 125 grams All-purpose flour
  • 300 ml Whole milk
  • 2 Large eggs
  • 30 grams Unsalted butter (melted)
  • 10 grams Granulated sugar
  • 1 pinch Salt
  • 50 grams Unsalted butter (for sauce)
  • 50 grams Granulated sugar (for sauce)
  • 100 ml Orange juice (freshly squeezed)
  • 1 tsp Orange zest
  • 30 ml Grand Marnier or other orange liqueur
  • 1 tbsp Powdered sugar (optional, for garnish)

Directions

Step 1

In a large mixing bowl, sift together the flour, sugar, and a pinch of salt.

Step 2

Whisk the eggs and milk together in a separate bowl until combined.

Step 3

Gradually add the wet ingredients to the dry ingredients, whisking continuously to avoid lumps.

Step 4

Stir in the melted butter and let the batter rest for 15 minutes.

Step 5

Heat a non-stick frying pan or crepe pan over medium heat and lightly grease it with butter.

Step 6

Pour a small ladleful of batter into the pan and quickly swirl it to coat the bottom in a thin, even layer.

Step 7

Cook for about 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip the crepe and cook for another 30 seconds. Transfer to a plate and repeat with the remaining batter.

Step 8

For the sauce, melt 50 grams of butter in a large skillet over medium heat.

Step 9

Stir in 50 grams of sugar and let it dissolve into the butter to create a caramel-like consistency.

Step 10

Add the orange juice and orange zest, simmering for 2-3 minutes until slightly thickened.

Step 11

If desired, add the Grand Marnier and flambé by carefully igniting the sauce with a long lighter. Allow the flames to subside before proceeding.

Step 12

Place one crepe at a time into the skillet, folding it into quarters to soak up the orange sauce. Repeat with all crepes.

Step 13

Arrange the sauced crepes on a serving plate and drizzle with any remaining sauce.

Step 14

Dust with powdered sugar before serving, if desired, and enjoy your homemade Crepes Suzette.
