Ingredients

  • 1.5 cups Black beans (cooked and rinsed)
  • 12 pieces Medjool dates (pitted)
  • 2 large Eggs
  • 0.25 cups Cocoa powder (unsweetened)
  • 0.25 cups Almond butter (or peanut butter)
  • 1 teaspoons Vanilla extract
  • 0.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.25 cups Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.

Step 2

In a food processor, combine the pitted Medjool dates with 2-3 tablespoons of hot water. Blend until a smooth paste forms.

Step 3

Add the black beans, eggs, cocoa powder, almond butter, vanilla extract, baking powder, and salt to the food processor. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.

Step 4

If using chocolate chips, fold them into the batter gently.

Step 5

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the edges start to pull away from the pan and a toothpick inserted into the center comes out mostly clean. A few moist crumbs on the toothpick are fine.

Step 7

Remove from the oven and let the brownies cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Step 8

Once cooled, slice into 12 squares and serve. Store leftovers in an airtight container in the refrigerator for up to 5 days.
