Ingredients

  • 2 tablespoons Cumin seeds
  • 2 tablespoons Coriander seeds
  • 2 tablespoons Fennel seeds
  • 10 Green cardamom pods
  • 2 Black cardamom pods
  • 10 Cloves
  • 2 inches Cinnamon stick
  • 1 tablespoon Black peppercorns
  • 1 teaspoon Mace
  • 0.5 Nutmeg

Directions

Step 1

Gather all the spices and ensure they are clean and free of any debris or impurities.

Step 2

Place a dry skillet or pan on medium heat and let it warm up for 1-2 minutes.

Step 3

Add the cumin seeds, coriander seeds, fennel seeds, green cardamom pods, black cardamom pods, cloves, cinnamon stick, black peppercorns, and mace to the pan. Dry roast the spices, stirring constantly, for 3-4 minutes until they release a fragrant aroma. Be careful not to burn them.

Remove the pan from heat and transfer the toasted spices to a large plate to cool completely.

Once cooled, break the nutmeg into smaller pieces and add it to the cooled spices.
