Ingredients

  • 1 cup Buckwheat groats (kasha)
  • 1 large Egg
  • 8 oz Bow tie pasta (farfalle)
  • 1 large Onion
  • 2 tbsp Vegetable oil or schmaltz (rendered chicken fat)
  • 2 cups Chicken or vegetable broth
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

1. In a small bowl, beat the egg until smooth. Mix the uncooked buckwheat groats with the egg, ensuring the grains are well coated.

Step 2

2. Heat a dry, medium-sized skillet over medium heat. Add the egg-coated kasha and cook, stirring constantly, until the grains are dry and separate, about 3-4 minutes. Remove from heat and set aside.

Step 3

3. Cook the bow tie pasta in a large pot of salted boiling water according to the package instructions. Drain, rinse with cold water to stop the cooking process, and set aside.

Step 4

4. Peel and dice the onion into small pieces. Heat the oil or schmaltz in a large skillet over medium heat. Add the onion and sauté until golden brown and fragrant, about 7-8 minutes.

Step 5

5. Stir the toasted kasha into the skillet with the onions. Pour in the chicken or vegetable broth, season with salt and pepper, and bring to a boil. Reduce the heat to low, cover, and simmer for 10-12 minutes, or until the kasha is tender and the liquid is absorbed.

Step 6

6. Add the cooked bow tie pasta to the skillet with the kasha mixture. Stir to combine and gently heat through, about 2-3 minutes.

Step 7

7. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 8

8. Serve warm, garnished with freshly chopped parsley if desired.
