Ingredients

  • 8 oz Bowtie pasta (farfalle)
  • 1 cup Buckwheat groats (kasha)
  • 1 large Egg
  • 2 tbsp Butter
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Chicken or vegetable broth
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.

Step 2

While the pasta cooks, place the buckwheat groats in a medium bowl. Crack the egg into the bowl and mix well to coat the groats evenly with the egg.

Step 3

Heat a large skillet over medium heat. Add the egg-coated kasha and cook, stirring constantly, until the grains are dry and separate, about 3-4 minutes. Transfer to a plate and set aside.

Step 4

In the same skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and garlic, and sauté until softened and fragrant, about 5 minutes.

Step 5

Add the toasted kasha back into the skillet along with the chicken or vegetable broth. Stir, bring to a boil, and reduce the heat to low. Cover and simmer until the kasha is tender and the liquid is absorbed, about 12-15 minutes.

Step 6

In a large bowl, combine the cooked bowtie pasta and the kasha mixture. Add the remaining tablespoon of butter, salt, and black pepper. Toss well to combine.

Step 7

Taste and adjust seasoning if necessary. Serve warm, garnished with fresh parsley, if desired.
