Ingredients

  • 300 g All-purpose flour
  • 4 large Eggs
  • 120 ml Milk
  • 1 tsp Salt
  • 50 g Butter
  • 2 large Onions
  • 200 g Gruyère cheese (or Emmental or another melty cheese)
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and milk. Mix with a wooden spoon or spatula until the dough is smooth and elastic, then let it rest for 10 minutes.

Step 2

In the meantime, peel and thinly slice the onions. Heat about 25g of butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized (about 15-20 minutes). Set aside.

Step 3

Grate the cheese and keep it ready for later use.

Bring a large pot of salted water to a boil. Place the Spätzle dough on a wooden board and use a Spätzle press, colander, or knife to scrape small portions of dough into the boiling water. Work in batches to avoid overcrowding.

Cook the Spätzle until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and transfer to a bowl.

Step 6

In a large skillet or heatproof baking dish, melt the remaining 25g of butter. Add the cooked Spätzle and gently toss to coat. Sprinkle the grated cheese over the Spätzle and place the dish under a broiler or in a preheated oven at 180°C (350°F) for a few minutes until the cheese is melted and bubbly.

Top the Käsespätzle with the caramelized onions and fresh parsley (if using) before serving. Serve hot, and enjoy!
