Ingredients

  • 300 grams ground lamb
  • 1 small, finely chopped onion
  • 2 minced garlic cloves
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoons ground cumin
  • 0.5 teaspoons paprika
  • 8 chopped dried apricots
  • 2 tablespoons, chopped fresh parsley
  • 6 sheets phyllo pastry sheets
  • 50 grams, melted unsalted butter
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes.

Step 3

Add the minced garlic and cook for another minute, stirring constantly.

Step 4

Stir in the ground lamb, breaking it up with a spoon, and cook until it is browned, about 5-6 minutes.

Step 5

Mix in the ground cinnamon, ground cumin, paprika, dried apricots, salt, and black pepper. Cook for 2 more minutes to combine the flavors.

Remove the skillet from heat and stir in the chopped fresh parsley. Allow the filling to cool slightly.

Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter. Layer a second sheet on top and brush with butter again. Repeat until you have three buttered layers.

Cut the stacked phyllo sheets into four equal strips lengthwise.

Place about 1 tablespoon of the lamb filling at the bottom of one phyllo strip. Fold the bottom corner over to form a triangle, then continue folding triangles up the strip until you reach the end, encasing the filling completely. Repeat with remaining strips and filling.

Place the folded triangles on the prepared baking sheet and brush the tops with more melted butter.

Repeat the process with the remaining phyllo sheets and filling.

Step 12

Bake for 18-20 minutes, or until the phyllo is golden and crisp.
