  • 2 pounds Yukon gold potatoes
  • 6 slices Bacon
  • 1 medium Yellow onion
  • 0.25 cup Apple cider vinegar
  • 0.33 cup Chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Wash and scrub the potatoes, then place them in a large pot. Cover the potatoes with cold water and add a pinch of salt. Bring the water to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes are cooking, fry the bacon in a large skillet over medium heat until crispy. Transfer the cooked bacon to a plate lined with paper towels to drain, then chop it into small pieces. Reserve about 2 tablespoons of the bacon grease in the skillet.

Step 3

Peel and dice the onion. Add the onion to the skillet with the reserved bacon grease and sauté over medium heat for 3–4 minutes, or until softened and fragrant.
