  • 1 large Egg, beaten (for egg wash)

Directions

Step 1

Peel and cube the potatoes, then boil them in salted water until fork-tender (about 10-15 minutes). Drain and mash the potatoes until smooth. Measure 200 grams of the mashed potatoes and set aside to cool.

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5–10 minutes until it becomes frothy.

In a large mixing bowl or the bowl of a stand mixer, combine the mashed potatoes, milk, yeast mixture, flour, and salt. Stir until a shaggy dough forms.
