  • 4 cups Beef broth
  • 1 whole Bay leaf
  • 4 medium Russet potatoes (peeled and cubed)
  • 2 medium Carrots (peeled and sliced)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef in batches until browned on all sides, about 6-8 minutes per batch. Remove the beef and set aside.

Reduce the heat to medium and add the onions to the pot. Sauté until they are softened and golden, about 8 minutes.
