Ingredients

  • 500 g all-purpose flour
  • 125 g cold unsalted butter
  • 120 ml ice-cold water
  • 1 tsp salt
  • 300 g potatoes
  • 200 g chicken breast
  • 1 medium onion
  • 2 garlic cloves
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp sugar
  • 0.5 tsp salt
  • 2 tbsp vegetable oil
  • 100 ml water
  • 1000 ml vegetable oil (for frying)

Directions

Step 1

Peel and dice the potatoes into small cubes. Boil them in a pot of water until tender. Drain and set aside.

Step 2

Finely chop the onion and mince the garlic. Dice the chicken breast into small pieces.

Step 3

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the chopped onion and garlic, sauté until fragrant.

Step 4

Add the diced chicken and cook until browned. Stir in the curry powder, turmeric powder, chili powder, salt, and sugar. Mix well.

Step 5

Add the boiled potatoes to the pan, mix to coat evenly with the spices.

Pour in 100 ml of water and stir. Allow the mixture to simmer for 5 minutes, then remove from heat. Let it cool completely.

In a large bowl, combine the all-purpose flour and 1 teaspoon of salt. Dice the cold butter into small cubes and rub it into the flour mixture until it resembles breadcrumbs.

Slowly add the ice-cold water to the flour mixture, kneading continuously until a smooth dough forms. Cover with a damp cloth and let it rest for 15 minutes.

Divide the dough into small balls, approximately the size of a golf ball. Roll each ball into a thin circle using a rolling pin.

Spoon about 1 tablespoon of the cooled filling onto the center of a dough circle. Fold the dough over to enclose the filling and press the edges firmly to seal.

Crimp the edges decoratively, using your fingers or a fork, to ensure the karipap are well sealed. Repeat with remaining dough and filling.

Heat 1000 ml of vegetable oil in a deep-fryer or large pot over medium heat. Once the oil is hot, fry the karipap in batches until golden brown, about 5 minutes per batch.

Step 13

Remove the karipap from the oil and drain on a paper towel. Serve warm.
