Ingredients

  • 2 medium-sized zucchini
  • 2 medium-sized yellow squash
  • 2 tablespoons olive oil
  • 3 large garlic cloves
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup heavy cream
  • 0.25 cup parmesan cheese
  • 0.25 cup breadcrumbs
  • 1 tablespoon butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Wash and slice the zucchini and yellow squash into thin, evenly-sized rounds.

Step 3

Heat a large skillet over medium heat. Add olive oil and minced garlic, cooking for 1-2 minutes until fragrant.

Step 4

Add the sliced zucchini and yellow squash to the skillet. Sprinkle with fresh thyme, salt, and black pepper. Stir and cook for 5-6 minutes until the squash softens slightly.

Step 5

Reduce the heat to low and pour in the heavy cream. Stir to coat the squash evenly and let the flavors meld for 3-4 minutes.

Step 6

Transfer the creamy squash mixture to the greased baking dish. Sprinkle parmesan cheese evenly over the top.

Step 7

In a small bowl, mix the breadcrumbs with melted butter. Sprinkle this mixture over the parmesan cheese to create a crispy topping.

Step 8

Bake in the preheated oven for 15 minutes, or until the top is golden brown and bubbly.

Step 9

Remove from the oven and allow it to cool for 5 minutes before serving.

Step 10

Serve warm as a side dish or a vegetarian main. Enjoy your Squishy Summer Squash!
