Ingredients

  • 2 pounds Russet potatoes
  • 4 Garlic cloves
  • 0.5 cup Extra virgin olive oil
  • 0.5 cup Milk
  • 1 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into even-sized chunks, approximately 2 inches in size. Rinse the potato chunks under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water. Bring the pot to a boil over medium-high heat and cook the potatoes for 15-20 minutes or until they are fork-tender.

Step 3

While the potatoes are cooking, peel the garlic cloves and slice them thinly.

Step 4

In a small saucepan, heat 0.5 cup of extra virgin olive oil over medium-low heat. Add the sliced garlic to the oil and cook gently, stirring often, until the garlic is golden and fragrant. This should take about 5 minutes. Be careful not to burn the garlic. Remove from heat and set aside.

Step 5

Once the potatoes are done cooking, drain them thoroughly and return them to the pot. Place the pot back on the stove over low heat for 1-2 minutes to evaporate any remaining moisture from the potatoes.

Step 6

Using a potato masher or ricer, mash the potatoes to your desired consistency. For a smoother texture, you can use a hand mixer.

Step 7

Gradually pour in the warm garlic-infused olive oil while mashing the potatoes. Be sure to include the golden garlic slices for extra flavor.

Step 8

Heat the milk separately in a small saucepan or microwave until warm, then add it to the mashed potatoes. Mix well to combine.

Step 9

Season the mashed potatoes with freshly ground black pepper and additional salt, if needed, to taste.

Step 10

Transfer the mashed potatoes to a serving dish and garnish with freshly chopped parsley, if desired. Serve warm and enjoy!
