Place the grated zucchini, chopped onions, diced red and green bell peppers into a large mixing bowl.
Sprinkle pickling salt over the vegetable mixture, cover, and let it sit for at least 2 hours (or overnight) to allow the water to release from the vegetables.
After soaking, drain the vegetable mixture well and press out excess liquid using a clean kitchen towel or cheesecloth.
In a large pot, combine granulated sugar, white vinegar, turmeric, mustard seeds, celery seeds, and cornstarch. Stir well until the sugar and cornstarch dissolve.
Place the drained zucchini mixture into the pot and bring the mixture to a boil over medium-high heat, stirring frequently.
Reduce the heat to medium and let the relish simmer for about 20 to 25 minutes, stirring occasionally, until the mixture thickens and the flavors meld together.
While cooking the relish, sterilize your canning jars in boiling water to ensure they are clean and hot.
Once the relish is cooked, ladle the hot mixture into sterilized jars, leaving 1/2-inch headspace at the top. Wipe the rims clean and secure the lids tightly.
Process the jars in a boiling water bath for 10 minutes to ensure a proper seal.
Remove the jars from the water bath and let them cool completely at room temperature. You will hear the lids pop, indicating a proper seal.
Store the sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening.
