Ingredients

  • 12 cups (grated) zucchini
  • 4 cups (chopped) onion
  • 2 cups (diced) red bell pepper

  • 6 cups granulated sugar
  • 2.5 cups white vinegar
  • 1 teaspoon ground turmeric
  • 2 teaspoons mustard seeds
  • 1 teaspoon celery seeds
  • 2 tablespoons cornstarch

Directions

Step 1

Place the grated zucchini, chopped onions, diced red and green bell peppers into a large mixing bowl.

Sprinkle pickling salt over the vegetable mixture, cover, and let it sit for at least 2 hours (or overnight) to allow the water to release from the vegetables.

After soaking, drain the vegetable mixture well and press out excess liquid using a clean kitchen towel or cheesecloth.

In a large pot, combine granulated sugar, white vinegar, turmeric, mustard seeds, celery seeds, and cornstarch. Stir well until the sugar and cornstarch dissolve.
