  • 15 ounces (1 can, drained and rinsed) black beans
  • 1.5 cups cooked rice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoons smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoons pepper
  • 6 large tortillas
  • 1 cup shredded cheese
  • 0.5 cup salsa
  • 0.25 cup (chopped) fresh cilantro
  • 0.5 cup sour cream

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Once the olive oil is hot, add the diced red bell pepper, green bell pepper, yellow onion, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
