Ingredients

  • 500 grams Mascarpone cheese
  • 250 milliliters Heavy cream
  • 4 Egg yolks
  • 120 grams Granulated sugar
  • 300 milliliters Espresso or strong coffee, cooled
  • 200 grams Ladyfingers (savoiardi)
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Dark rum or coffee liqueur (optional)

Directions

Step 1

In a medium-sized bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Place the bowl over a pot of simmering water (double boiler method) and whisk constantly for about 5–7 minutes until it thickens slightly. Remove from heat and let it cool.

Step 2

In a large mixing bowl, whisk the mascarpone cheese until smooth. Gently fold the cooled egg mixture into the mascarpone until fully incorporated.

Step 3

In another bowl, whip the heavy cream until it forms stiff peaks. Carefully fold the whipped cream into the mascarpone mixture, a third at a time, to maintain the light texture. Stir in the vanilla extract.

Step 4

Mix the cooled espresso with the dark rum or coffee liqueur (if using) in a shallow dish. Quickly dip each ladyfinger into the coffee mixture for 1–2 seconds, ensuring they are moist but not soggy.

Step 5

Arrange a layer of coffee-soaked ladyfingers at the bottom of a rectangular serving dish or baking pan (approx. 9 x 13 inches). Spread half of the mascarpone mixture evenly over the ladyfingers.

Step 6

Add a second layer of coffee-soaked ladyfingers on top of the mascarpone layer. Spread the remaining mascarpone mixture evenly over the top.

Step 7

Dust the top generously with unsweetened cocoa powder using a fine-mesh sieve. Cover the dish tightly with plastic wrap and refrigerate for at least 4–6 hours, or overnight for best results.
