Ingredients

  • 2 pounds fresh mussels
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 small, finely chopped shallots
  • 4 minced garlic cloves
  • 1 cup dry white wine
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 4 sprigs fresh thyme
  • 2 tablespoons, chopped fresh parsley
  • 1 bay leaf
  • 1 teaspoon (or to taste) sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 sliced, for serving baguette

Directions

Step 1

Clean and debeard the mussels under cold running water. Discard any that are cracked or do not close when tapped. Set aside.

Step 2

In a large heavy-bottomed pot or Dutch oven, melt the unsalted butter and olive oil over medium heat.

Step 3

Add the finely chopped shallots and sauté for 2-3 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 1 minute, being careful not to let it burn.

Step 4

Pour in the dry white wine and bring to a gentle simmer. Let it cook for 2-3 minutes to reduce slightly.

Step 5

Stir in the whole milk, heavy cream, thyme sprigs, bay leaf, sea salt, and freshly ground black pepper. Reduce the heat to medium-low and let the broth warm through for 3-4 minutes, but do not let it boil.

Step 6

Add the cleaned mussels to the pot and cover with a tight-fitting lid. Allow the mussels to steam for 5-7 minutes, shaking the pot occasionally, until all the mussels have opened. Discard any that remain closed.

Step 7

Remove the pot from the heat and stir in the chopped fresh parsley. Taste the broth and adjust seasoning with additional salt or pepper if necessary.

Step 8

Serve the mussels immediately in bowls, ladling the creamy broth over the top. Garnish with extra parsley if desired. Serve with fresh slices of baguette for dipping.
