Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 20 ounces Crushed pineapple (with juice)
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 0.5 cups Unsalted butter
  • 8 ounces Cream cheese (softened)
  • 2 cups Powdered sugar
  • 0.5 cups Additional crushed pineapple (optional, drained for garnish)
  • 0.5 cups Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan.

Step 2

In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Mix until well combined.

Step 3

Add the crushed pineapple (along with its juice), eggs, and vanilla extract to the dry mixture. Stir until the batter is smooth and fully incorporated.

Step 4

Pour the batter into the prepared baking pan and spread it evenly.

Step 5

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

While the cake is baking, prepare the frosting. In a medium bowl, beat the cream cheese and butter together until creamy and smooth.

Step 7

Gradually add the powdered sugar and continue to beat until the frosting is light and fluffy. If desired, mix in a tablespoon of pineapple juice for extra flavor.

Step 8

Once the cake has finished baking, remove it from the oven and allow it to cool completely in the pan.

Step 9

Spread the cream cheese frosting over the cooled cake using a spatula.

Step 10

Garnish with additional crushed pineapple and/or chopped nuts, if using.

Step 11

Slice and serve. Refrigerate any leftovers to keep the frosting fresh.
