Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 20 oz red enchilada sauce
  • 4 oz diced green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 15 oz black beans, drained and rinsed
  • 12 pieces corn tortillas
  • 3 cups shredded Mexican blend cheese
  • 0.5 cup sour cream
  • 2 tbsp chopped cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Use a wooden spoon to break the beef into crumbles as it cooks.

Step 3

Add the diced onion to the skillet with the beef and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

Reduce the heat to low and stir in the red enchilada sauce, diced green chilies, cumin, chili powder, and black beans. Simmer the mixture for 5 minutes to allow the flavors to blend.

Step 5

Spread a small amount of the beef and sauce mixture (about 1/2 cup) evenly on the bottom of the greased casserole dish.

Step 6

Place a layer of 4 corn tortillas over the sauce, tearing them as needed to fit. Spread 1/3 of the remaining beef and sauce mixture over the tortillas, followed by 1 cup of shredded cheese.

Step 7

Repeat this layering process two more times: tortillas, beef and sauce mixture, then cheese. Finish with a generous sprinkling of cheese on top.

Step 8

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it rest for 5 minutes to set. Serve warm, topped with sour cream and chopped cilantro, if desired.
