Ingredients

  • 12 pieces Large eggs
  • 0.5 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon White vinegar
  • 0.25 teaspoon Cayenne pepper
  • 0.25 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh chives (optional, for garnish)
  • 6 pieces Pickled jalapeño slices (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a large saucepan. Cover them with cold water, ensuring the water level is about 1 inch above the eggs.

Step 2

Bring the water to a rolling boil over medium-high heat. Once boiling, remove the saucepan from the heat, cover it with a lid, and let the eggs sit for 10 minutes.

Step 3

Prepare an ice bath by filling a large bowl with ice and water. Using a slotted spoon, transfer the eggs to the ice bath to cool for 10 minutes.

Step 4

Once the eggs are cool, peel them gently under running water to avoid breaking the whites. Pat the eggs dry with a paper towel.

Step 5

Cut each egg in half lengthwise and carefully scoop out the yolks using a small spoon. Place the yolks in a medium mixing bowl and arrange the egg whites on a serving platter.

Step 6

Mash the yolks with a fork until they reach a fine crumb-like texture. Add mayonnaise, Dijon mustard, white vinegar, cayenne pepper, smoked paprika, salt, and black pepper. Stir until the mixture is smooth and creamy.

Step 7

Using a spoon or a piping bag fitted with a star tip, fill each egg white cavity with the yolk mixture.

Step 8

Optional: Garnish each deviled egg with a sprinkle of smoked paprika, a pinch of chopped fresh chives, or a halved pickled jalapeño slice for an added spicy kick.

Step 9

Chill the deviled eggs in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.

Step 10

Serve cold and enjoy the devilish, spicy goodness!
