  • 0.25 teaspoons Asafoetida (hing) powder
  • 1 teaspoons Salt
  • 2 tablespoons Butter, melted
  • 0.75 cups Water
  • 4 cups Vegetable oil

Directions

Step 1

In a large mixing bowl, combine gram flour, rice flour, coarsely ground black pepper, red chili powder, asafoetida, and salt.

Step 2

Add melted butter to the dry ingredients and mix well until the mixture resembles a coarse meal.

Step 3

Gradually add water to the mixture and knead into a smooth, soft dough. The dough should be pliable but not sticky.

Heat vegetable oil in a deep frying pan over medium heat until it reaches around 350°F (175°C).

Meanwhile, fill a sev maker with a medium-fine-holed plate with a portion of the dough.

Step 6

Once the oil is hot, squeeze the dough into the oil in a circular motion, creating a web-like pattern. Be cautious while handling hot oil.

Fry the sev until it turns golden brown and crisp, ensuring to flip gently to cook evenly on both sides. This may take about 3-4 minutes.
