Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 15 ounces diced tomatoes (with juice)
  • 8 ounces tomato sauce
  • 15 ounces black beans, drained and rinsed
  • 15 ounces pinto beans, drained and rinsed
  • 15 ounces sweet corn, drained
  • 3 cups beef broth
  • 2 tablespoons taco seasoning
  • 1 tablespoon ranch seasoning mix
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 1 cup sour cream (optional, for garnish)
  • 1 cup tortilla chips (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it into crumbles with a wooden spoon, about 5-7 minutes. Drain excess fat if needed.

Step 3

Add the diced onion and minced garlic to the pot. Cook for 3-4 minutes until softened and fragrant.

Step 4

Stir in the taco seasoning, ranch seasoning, salt, and black pepper. Mix thoroughly to coat the beef and onions.

Step 5

Add the diced tomatoes (with juice), tomato sauce, black beans, pinto beans, sweet corn, and beef broth to the pot. Stir well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for 20 minutes. Stir occasionally.

Step 7

Taste the soup and adjust seasoning with additional salt or pepper if needed.

Step 8

Ladle the soup into bowls and garnish with shredded cheddar cheese, sour cream, and crushed tortilla chips if desired.

Step 9

Serve hot and enjoy!
