  • 4 pieces boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic cloves, minced
  • 8 ounces button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon fresh thyme
  • 1 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Season the chicken thighs evenly with salt and black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 4–5 minutes per side until golden brown. Remove from the skillet and set aside on a plate.

Step 3

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and cook for 30 seconds until fragrant.

Add the sliced mushrooms and sauté for 5–7 minutes until they release their moisture and become golden brown.
