Peel and slice the onion into thin rings. Mince the garlic cloves and set them aside.
In a slow cooker, add beef chuck roast, beef broth, sliced onion, minced garlic, soy sauce, Worcestershire sauce, dried thyme, and black pepper. Stir gently to combine.
Cover the slow cooker with the lid and cook on low for 8 hours, or until the beef is tender and can be shredded easily with a fork.
Once the beef is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the juices.
Preheat the oven to 375°F (190°C).
