  • 15 oz Black-eyed peas, drained and rinsed
  • 1.5 cups Sweet corn, drained or thawed if using frozen
  • 3 Roma tomatoes, diced
  • 1 Red bell pepper, diced
  • 1 Green bell pepper, diced
  • 1 Red onion, finely diced
  • 1 Jalapeño, seeded and finely chopped (optional)
  • 0.5 cups Fresh cilantro, chopped
  • 0.25 cups Olive oil
  • 0.25 cups Red wine vinegar
  • 2 tbsp Fresh lime juice
  • 1 tbsp Honey (or agave syrup for vegan option)
  • 2 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 bag Tortilla chips, for serving (optional)

Directions

Step 1

In a large mixing bowl, combine the black beans, black-eyed peas, corn, diced tomatoes, red bell pepper, green bell pepper, red onion, jalapeño (if using), and chopped cilantro.

Step 2

In a separate smaller bowl, whisk together the olive oil, red wine vinegar, lime juice, honey (or agave syrup), minced garlic, ground cumin, salt, and black pepper to create the dressing.

Step 3

Pour the dressing over the bean and vegetable mixture, and gently toss everything together until evenly coated.

Step 4

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together. For best results, refrigerate for 2 hours or overnight.

Step 5

Before serving, give the mixture a gentle stir to redistribute the dressing.

Step 6

Serve chilled as a salad or as a dip with tortilla chips. Enjoy!
