Trim any excess sinew from the kangaroo loin and cut it into bite-sized pieces.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the kangaroo meat and sear it for 2-3 minutes on each side until browned. Remove the meat from the skillet and set aside.
