Ingredients

  • 300 grams Kang Kong (water spinach)
  • 4 cloves Garlic
  • 1 piece Red chili (optional)
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Soy sauce
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Sugar
  • 2 tablespoons Water

Directions

Step 1

Wash the kang kong thoroughly under running water to remove dirt. Trim the tough stems, leaving the tender stems and leaves. Pat dry with a clean kitchen towel.

Step 2

Peel and finely chop the garlic cloves. Slice the red chili thinly if using.

Step 3

In a small bowl, mix the oyster sauce, soy sauce, sugar, and water. Set aside.

Step 4

Heat a wok or large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.

Step 5

Once the oil is hot, add the chopped garlic and sliced chili (if using). Stir-fry for 15–20 seconds or until fragrant, being careful not to burn the garlic.

Step 6

Increase the heat to high and add the kang kong to the wok. Stir-fry quickly to coat the leaves and stems in the oil and garlic.

Step 7

Pour the prepared sauce mixture over the kang kong. Stir-fry for 1–2 minutes or until the kang kong is just wilted and coated in the sauce.

Step 8

Remove from heat immediately to avoid overcooking the leaves.

Transfer the stir-fried kang kong to a serving plate and serve immediately as a side dish or with steamed rice.
