Ingredients

  • 500 grams all-purpose flour
  • 75 grams granulated sugar
  • 7 grams active dry yeast
  • 250 milliliters whole milk
  • 75 grams unsalted butter
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons ground cinnamon
  • 100 grams light brown sugar
  • 75 grams unsalted butter (for filling)
  • 100 grams powdered sugar
  • 2 tablespoons water

Directions

Step 1

Warm the milk gently in a saucepan until it is lukewarm (around 37°C or 98°F). Remove from heat and add the active dry yeast. Stir briefly and let it sit for about 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, and salt. Stir to mix.

Step 3

Melt 75 grams of butter and let it cool slightly. Add the melted butter, egg, and frothy yeast mixture to the flour blend. Mix to form a soft dough.

Step 4

Knead the dough on a lightly floured surface for about 5-10 minutes until it is smooth and elastic.

Step 5

Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Step 6

Meanwhile, in a small bowl, prepare the cinnamon filling by mixing the light brown sugar and ground cinnamon together.

Step 7

Punch down the raised dough and roll it out on a floured surface to a rectangle approximately 30x40 cm (12x16 inches).

Step 8

Spread 75 grams of softened butter evenly over the dough rectangle with a spatula or the back of a spoon. Sprinkle the cinnamon and sugar mix evenly over the buttered dough.

Step 9

Starting from the longer side of the rectangle, roll the dough into a tight log. Use a sharp knife to slice the log into 12 equal pieces.

Step 10

Place each piece, cut side up, in a baking dish lined with parchment paper. Cover with a clean cloth and let them rise again for about 30 minutes.

Step 11

Preheat the oven to 200°C (390°F).

Step 12

Bake the kanelsnegl in the preheated oven for 15-20 minutes, or until they are golden brown.

Step 13

While the rolls are baking, prepare the glaze by mixing the powdered sugar with water until smooth.

Step 14

Once baked, allow the kanelsnegl to cool slightly before drizzling the glaze over the top. Serve warm or at room temperature.
