Ingredients

  • 2 cups Whole wheat flour
  • 2 medium, finely chopped Onion
  • 2 small, finely chopped Green chilies
  • 2 tablespoons, finely chopped Fresh coriander leaves
  • 0.5 teaspoons Carom seeds (ajwain)
  • 0.5 teaspoons Red chili powder
  • 1 teaspoons Salt
  • 4 tablespoons Ghee or oil (for cooking the parathas)
  • 0.75 cups (as needed for dough) Water
  • 0.25 cups, for rolling Dry flour

Directions

Step 1

In a large mixing bowl, add the whole wheat flour and salt. Gradually add water and knead into a soft, pliable dough. Cover with a damp cloth and let it rest for 15 minutes.

Step 2

While the dough rests, prepare the filling. Combine the finely chopped onions, green chilies, coriander leaves, carom seeds, red chili powder, and a pinch of salt in a bowl. Mix well and set aside.

Step 3

Divide the dough into 8 equal portions. Roll each portion into a small ball and flatten it slightly into a disc.

Step 4

Take one disc and roll it out into a small circle (about 4-5 inches in diameter) using dry flour for dusting. Place about 2 tablespoons of the onion mixture in the center.

Step 5

Bring the edges of the rolled-out dough together, pinching to seal the filling inside. Flatten it slightly and roll it out again gently into a larger circle (about 7-8 inches in diameter). Be careful not to let the filling spill out.

Heat a tawa or flat skillet over medium heat. Place the rolled paratha on the hot tawa and cook for about 1-2 minutes, or until you see bubbles forming.

Flip the paratha and spread 1 teaspoon of ghee or oil on the cooked side. Flip again and spread another teaspoon of ghee or oil on the other side. Cook until both sides are golden brown and crispy.

Step 8

Repeat the process with the remaining dough and onion mixture to make more parathas.
