Ingredients

  • 1 cup Kamut berries
  • 1 cup Spelt berries
  • 1 cup Wild rice
  • 4 cups Vegetable broth (or chicken broth)
  • 3 tablespoons Olive oil
  • 1 large Yellow onion, finely chopped
  • 3 Celery stalks, finely chopped
  • 2 Carrots, finely chopped
  • 3 Garlic cloves, minced
  • 1 cup Fresh parsley, chopped
  • 1 tablespoon Sage leaves, minced (or 1 tsp dried sage)
  • 1 teaspoon Fresh thyme leaves (or ½ tsp dried thyme)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Dried cranberries (optional)
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Rinse the kamut berries, spelt berries, and wild rice under cold water to remove any impurities.

Step 2

Add the grains and rice to a medium pot with 4 cups of vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 50–60 minutes until the grains are tender and the liquid is mostly absorbed. Drain any excess liquid if necessary and set aside.

Step 3

While the grains are cooking, heat 3 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the chopped onion, celery, and carrots to the skillet. Sauté for 5–7 minutes until softened.

Step 5

Stir in the minced garlic, sage, and thyme, and cook for another 1–2 minutes until fragrant.

Step 6

Preheat your oven to 350°F (175°C) if you plan to bake the stuffing to serve warm.

Step 7

In a large mixing bowl, combine the cooked grains and wild rice with the sautéed vegetable mixture.

Step 8

Stir in the chopped parsley, salt, black pepper, dried cranberries (if using), and chopped nuts (if using). Mix well to ensure everything is evenly distributed.

Step 9

If serving immediately, transfer the mixture to a serving dish. Alternatively, for a baked texture, transfer the mixture to a greased baking dish and bake in the preheated oven for 20–25 minutes until heated through and slightly crispy on top.

Step 10

Serve warm as a side dish or stuffing, and enjoy this hearty and flavorful dish!
