Ingredients

  • 1 block (approximately 100g) Kamaboko (Japanese fish cake)
  • 1 medium Cucumber
  • 1 small Carrot
  • 2 stalks Green onion (scallion)
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Soy sauce
  • 1 teaspoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 1 teaspoon Roasted sesame seeds
  • 1 pinch Salt
  • 2 cups Optional: Mixed greens or lettuce

Directions

Step 1

Slice the kamaboko into thin strips or small bite-sized pieces and set aside.

Step 2

Wash the cucumber thoroughly and cut it into thin half-moon slices. Sprinkle a small pinch of salt over the cucumber slices and let sit for 5 minutes. This will draw out excess water. After 5 minutes, gently squeeze the cucumber slices to remove the liquid and set aside.

Peel the carrot and julienne it into thin matchstick-sized pieces.

Step 4

Thinly slice the green onions on a diagonal and set aside.

Prepare the dressing in a small bowl by combining mayonnaise, soy sauce, rice vinegar, sesame oil, and roasted sesame seeds. Mix well until smooth and creamy.
