Ingredients

  • 1000 grams Beef chuck or stew meat
  • 2 tablespoons Butter
  • 2 medium Yellow onion
  • 2 tablespoons All-purpose flour
  • 4 cups Beef stock
  • 3 Bay leaves
  • 10 Allspice berries
  • 3 medium Carrots
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Cut the beef into 1-2 inch cubes. Pat dry with paper towels to remove excess moisture.

Step 2

Peel and chop the onions into wedges and carrots into thick slices.

Step 3

In a large Dutch oven or heavy-bottomed pot, melt the butter over medium-high heat.

Step 4

Add the beef cubes to the pot in batches, browning them on all sides. Remove the beef from the pot and set it aside.

Step 5

Reduce the heat to medium and add the chopped onions to the pot. Sauté until they are soft and slightly golden, about 5 minutes.

Step 6

Sprinkle the flour over the onions and stir well, cooking for another 1-2 minutes to eliminate the raw flour taste.

Step 7

Gradually pour in the beef stock while stirring to prevent lumps. Bring the mixture to a gentle simmer.

Step 8

Return the browned beef to the pot. Add the bay leaves, allspice berries, carrots, salt, and black pepper.

Step 9

Cover the pot with a lid and reduce the heat to low. Simmer gently for 1.5 to 2 hours, stirring occasionally, until the beef is fork-tender.

Step 10

Taste and adjust the seasoning with additional salt and pepper if necessary.

Step 11

Remove the bay leaves and allspice berries before serving.

Step 12

Garnish with fresh parsley and serve hot with boiled potatoes or crusty bread.
