Ingredients

  • 12 ounces smoked sausage
  • 6 cups kale
  • 3 medium russet potatoes
  • 2 large carrots
  • 2 medium celery stalks
  • 1 medium yellow onion
  • 3 large garlic cloves
  • 6 cups chicken broth
  • 14.5 ounces canned diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Slice the smoked sausage into 1/4-inch rounds and set aside.

Step 2

Wash the kale thoroughly and remove the tough stems. Roughly chop the leaves into bite-sized pieces.

Step 3

Peel the russet potatoes and cut them into 1/2-inch cubes. Set aside.

Step 4

Peel and slice the carrots into 1/4-inch thick rounds. Dice the celery and yellow onion. Mince the garlic cloves.

Step 5

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and sauté for 3-4 minutes, until lightly browned. Transfer the sausage to the slow cooker.
