Ingredients

  • 6 cups Kale
  • 1 cup Red cabbage
  • 1 medium Carrot
  • 2 stalks Green onion
  • 0.25 cup Peanut butter (creamy or natural)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Sesame oil
  • 1 tablespoon Fresh lime juice
  • 1 teaspoon Ginger (grated)
  • 1 clove Garlic (minced)
  • 2 tablespoons Water
  • 0.25 cup Chopped peanuts (optional topping)

Directions

Step 1

Wash the kale thoroughly, remove the stems, and slice the leaves into thin ribbons. Place the kale in a large mixing bowl.

Step 2

Shred the red cabbage and add 1 cup to the mixing bowl with the kale.

Step 3

Peel and grate the carrot. Add it to the bowl along with the thinly sliced green onions.

Step 4

In a separate bowl, prepare the peanut dressing. Combine the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, lime juice, grated ginger, minced garlic, and water. Whisk until smooth and creamy.

Step 5

Pour the peanut dressing over the vegetable mixture in the large mixing bowl.

Step 6

Using clean hands or tongs, toss everything thoroughly until the veggies are evenly coated in the peanut dressing.

Step 7

Let the slaw sit for about 10 minutes to allow the kale to soften slightly and the flavors to meld.

Step 8

Before serving, sprinkle with chopped peanuts for a crunchy garnish, if desired.

Step 9

Serve immediately as a side dish or refrigerate for up to 1 day for later use. Enjoy!
