Ingredients

  • 2 whole grapefruit
  • 1 whole avocado
  • 3 tablespoons extra-virgin olive oil

  • 1 teaspoon Dijon mustard

  • 2 tablespoons grapefruit juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup sliced almonds
  • 0.25 cup cranberries (dried)

Directions

Step 1

Wash the kale thoroughly, then remove the tough stems. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Slice the peel and pith off each grapefruit with a sharp knife. Carefully cut along the membranes to release the segments, and collect the juice in a small bowl while doing so.
