Ingredients

  • 3 cups fresh kale leaves (de-stemmed and chopped)
  • 2 tablespoons olive oil
  • 1 medium yellow onion (finely chopped)
  • 2 cloves garlic cloves (minced)
  • 0.5 cups all-purpose flour
  • 0.5 cups breadcrumbs
  • 2 large eggs
  • 0.25 cups grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 tablespoons vegetable oil (for frying)

Directions

Step 1

Bring a large pot of water to a boil. Add the chopped kale leaves and blanch them for 2-3 minutes until tender. Drain and rinse under cold water to cool. Squeeze out any excess water and chop finely.

Step 2

Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for 1 minute longer. Remove from heat and allow to cool slightly.

Step 3

In a large mixing bowl, combine the blanched kale, cooked onion and garlic, all-purpose flour, breadcrumbs, eggs, Parmesan cheese, oregano, cumin, salt, and black pepper. Mix until well incorporated.

Using your hands or a large spoon, form the mixture into small, flat patties about 2-3 inches in diameter.

Heat the vegetable oil in a large skillet over medium heat. Fry the patties in batches, cooking each side for 3-4 minutes or until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.
