Ingredients

  • 2 cups Kalamata olives
  • 1 Garlic bulb
  • 2 tablespoons Extra virgin olive oil
  • 1 Fresh rosemary sprig
  • 2 Fresh thyme sprigs
  • 0.5 teaspoons Red pepper flakes (optional)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Cut the top off the garlic bulb to expose the tops of the cloves. Place the garlic bulb on a piece of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap the foil around the garlic to seal it into a pouch.

Place the garlic pouch in the preheated oven and roast for 25-30 minutes, or until the garlic is soft and caramelized. Remove from the oven and let it cool.
