Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 0.75 cups Mayonnaise
  • 0.5 cups Sour Cream
  • 2 tbsp Yellow Mustard
  • 1 tbsp Apple Cider Vinegar
  • 2 Celery Stalks
  • 1 small Red Onion
  • 4 Hard-Boiled Eggs
  • 2 tbsp Fresh Chives
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 0.5 tsp Smoked Paprika (optional)

Directions

Step 1

Wash and peel the Yukon Gold potatoes. Cut them into 1-inch cubes for even cooking.

Step 2

In a large pot, bring water to a boil and add a pinch of salt. Carefully add the potato cubes and cook them for 10-12 minutes, or until they are fork-tender but not falling apart.

Step 3

Drain the potatoes and set them aside to cool slightly.

Step 4

While the potatoes are cooling, finely dice the celery stalks and small red onion. Chop the hard-boiled eggs into small pieces and set aside.

Step 5

In a large mixing bowl, combine the mayonnaise, sour cream, yellow mustard, apple cider vinegar, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Stir well to create the dressing.

Step 6

Gently fold the potatoes into the dressing, ensuring they are evenly coated without breaking apart.

Step 7

Add the chopped celery, red onion, and hard-boiled eggs to the bowl. Mix gently to combine.

Step 8

Sprinkle the salad with fresh chives and a pinch of smoked paprika for garnish (optional).

Step 9

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld.

Step 10

Serve chilled as a side dish and enjoy!
