Ingredients

  • 1 pound Ground lamb
  • 0.5 cup Yellow onion, finely grated
  • 0.25 cup Fresh parsley, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Pine nuts, lightly toasted
  • 1 tablespoon Olive oil
  • 4 pieces Pita bread or burger buns
  • 0.5 cup Tahini sauce or plain yogurt (optional, for serving)
  • 1 cup Sliced tomatoes (optional, for serving)
  • 1 cup Sliced cucumbers (optional, for serving)
  • 1 cup Lettuce (optional, for serving)

Directions

Step 1

In a large mixing bowl, combine the ground lamb, grated onion, parsley, cumin, coriander, cinnamon, minced garlic, salt, and black pepper. Mix well using your hands or a spoon until all ingredients are evenly incorporated.

Step 2

Fold in the toasted pine nuts gently to avoid breaking them.

Step 3

Divide the mixture into 4 equal portions and shape each portion into a round patty, about 3/4 inch thick. Place the patties on a plate and refrigerate for 15 minutes to firm up.

Step 4

Heat a grill, grill pan, or skillet over medium-high heat and brush lightly with olive oil.

Step 5

Cook the lamb patties for about 4-5 minutes per side, or until the internal temperature reaches 160°F (71°C) for medium doneness. Avoid pressing down on the patties to retain their juices.

Step 6

Toast the pita bread or burger buns lightly on the grill or in a toaster, if desired.

Step 7

Assemble the burgers by placing the cooked lamb patties on the pita or buns, and top with tahini sauce or yogurt, sliced tomatoes, cucumbers, and lettuce, if using.

Step 8

Serve immediately with your choice of side dishes, such as a fresh salad or fries.
