Ingredients

  • 2 cups All-purpose flour
  • 4 large Eggs
  • 0.5 cups Milk
  • 1 teaspoon Salt
  • 3 tablespoons Butter
  • 1 large Yellow onion
  • 2 cups Gruyère cheese, shredded
  • 0.25 teaspoons Nutmeg (optional)
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

In a large bowl, combine the flour and salt. Make a well in the center, then add the eggs and milk. Stir the mixture until smooth and thick, resembling the consistency of pancake batter. If needed, add a little more milk to adjust the texture.

Step 2

Bring a large pot of salted water to a simmer. Using a spaetzle maker or a colander with large holes, press the dough through into the simmering water, creating small noodle-like drops.

Step 3

Cook the spaetzle for 2-3 minutes, or until they float to the surface. Remove them with a slotted spoon and transfer to a bowl. Repeat until all dough is cooked.

Step 4

Peel and thinly slice the onion. In a large skillet, melt the butter over medium heat and add the onion slices. Cook them slowly, stirring occasionally, until they are caramelized and golden brown (approximately 10-15 minutes). Remove and set aside.

Step 5

Preheat the oven to 375°F (190°C). In a greased baking dish, layer the cooked spaetzle, shredded Gruyère cheese, and caramelized onions. Repeat the layers until all ingredients are used, ending with a cheese layer on top.

Step 6

Place the dish in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly. For a golden crust on top, finish under the broiler for 1-2 minutes.

Step 7

Optionally, sprinkle freshly chopped parsley and a pinch of nutmeg over the top before serving. Serve hot and enjoy your homemade Kaese Spaetzle!
